Gluten free sourdough bread is within the reach of every home baker. Frustrated by the highly refined ingredients in many commercially made gluten free (GF) breads, Chef Camila embarked on a quest to bake her own. She has tweaked the process to her satisfaction and is excited to share her knowledge as you make bread together in this interactive online class.
Class materials:
  • GF sourdough starter, available for pick up at The Civic Kitchen (no additional charge).
  • Optional ingredient kit with all ingredients needed for class, available for pick up at The Civic Kitchen (additional charge; see below.)
  • Short videos from chef Camila, showing you how to feed your starter the day before class, and how to finish baking after our Class 1 session concludes.
Class schedule:
  • The night before class, feed your starter as demonstrated in Camila’s video.
  • In Class 1, Camilla will teach you the basics of GF sourdough bread making, complete with troubleshooting tips. She will discuss the creation and maintenance of your own starter and guide you in making a simple cracker recipe to use up excess starter. She will lead you in measuring and mixing your dough, which will be left to rise.
  • After Class 1 concludes and your dough has risen, you’ll bake your loaf at home. Don’t worry! We’ll provide a video from Camila showing you exactly how to finish everything off.
  • Finally, participants will reconvene the following morning for Class 2, a one hour Q&A (and bread tasting & show-off!) session.
Videos and instructions for picking up starter and/or ingredient kits will be emailed after you register. If you wish to make your own starter, we’ll provide instructions in advance upon your request (you should begin at least 2 weeks before class).

You only need to purchase one spot per household. This experience is held via Zoom, with a maximum of 12 students – you will receive instructions for logging in after registering. Printable recipes and handouts are available 48 hours prior to the start of the experience. Cooking classes are recorded, and you may view the videos by logging into your account on our website.

About the teacher

Camila Loew

CAMILA LOEW has spent her life among three cultures: Argentina, the US, and Spain, yet she swears she was Japanese in a past life. She is the founder of Sobremesa and Sobremesa Culinary Tours, offering food-based tours to Japan, Barcelona, and the Basque Country.
Camila has worked with food for many years, as a writer, entrepreneur, academic professor, culinary instructor, and tour guide. She holds a Ph.D. in Humanities and is a certified Nutrition Consultant, as well as a trained chef. Her first cookbook, The Sobremesa Cookbook was published in 2020.
During her years in Berkeley, California, Camila served as Academic Dean at Bauman College for Holistic Nutrition and Culinary Arts. After returning to Spain, she founded the Food Studies & Gastronomy Study Abroad program at the University of Barcelona in 2020. In addition to leading culinary tours, Camila helps people to achieve better health through food, sharing her love for the Mediterranean region and its cuisines.
Camila’s cooking style is inspired by fresh produce and the change of seasons, but above all, by people and the daily magical act of gathering around the table to share a meal. When she’s not teaching, at the market, in the kitchen or at the table, Camila enjoys drinking tea, practicing yoga, hiking in the Collserola hills, and reading.
Camila feels most comfortable in front of a group teaching, usually something to do with translating culture through food.
