Pintxos of San Sebastian

Sun | Sep 18, 2022 | 10A–12P PT

Teacher Camila Loew

PINTXOS are the fantastic snacks offered at eating establishments throughout Basque country. The culinarily curious - locals and tourist alike - wander stone streets, popping in to sample creamy Spanish tortilla at one tiny, lowlit bar and a towering wonder of molecular gastronomy at the modernist spot a few doors down. It’s a literal moveable feast.
Camila just returned from leading her most recent tasting tour of San Sebastián, eager to share new dishes discovered & devoured along the way. She will introduce you to the Arzak-Style Pintxo, making magic with humble potatoes, onion & egg. Atari’s Prawn Skewer with its vibrant vinaigrette is a time tested classic, winner of the coveted annual "best pintxo" prize. Bar Ganbara’s pan-seared "Grilled" Mushrooms are also legendary, with the simplest sauce. And Eggplant Montadito will be your new favorite open-faced sandwich for fall.
Make every recipe along with Camila, or save some final steps to finish cooking in time for evening cocktail hour...these hearty snacks will make a substantial lunch or dinner. Pour some fizzy txakoli or a vermut over ice, and savor your adventure into Basque country.

About the teacher

Camila Loew

CAMILA LOEW has spent her life among three cultures: Argentina, the US, and Spain, yet she swears she was Japanese in a past life. She is the founder of Sobremesa and Sobremesa Culinary Tours, offering food-based tours to Japan, Barcelona, and the Basque Country.
Camila has worked with food for many years, as a writer, entrepreneur, academic professor, culinary instructor, and tour guide. She holds a Ph.D. in Humanities and is a certified Nutrition Consultant, as well as a trained chef. Her first cookbook, The Sobremesa Cookbook was published in 2020.
During her years in Berkeley, California, Camila served as Academic Dean at Bauman College for Holistic Nutrition and Culinary Arts. After returning to Spain, she founded the Food Studies & Gastronomy Study Abroad program at the University of Barcelona in 2020. In addition to leading culinary tours, Camila helps people to achieve better health through food, sharing her love for the Mediterranean region and its cuisines.
Camila’s cooking style is inspired by fresh produce and the change of seasons, but above all, by people and the daily magical act of gathering around the table to share a meal. When she’s not teaching, at the market, in the kitchen or at the table, Camila enjoys drinking tea, practicing yoga, hiking in the Collserola hills, and reading.
Camila feels most comfortable in front of a group teaching, usually something to do with translating culture through food.
