Ingredients

STARTBREAK
Everything (but the) Bagel Tart Pastry Shell
1 cup (142g) all-purpose flour, plus more for rolling out the dough
1 tablespoon (9g) black sesame seeds
1 tablespoon (9g) white sesame seeds
1 tablespoon (9g) poppy seeds
1 tablespoon (10g) dried minced garlic
1 tablespoon (10g) dried minced onion
1 teaspoon kosher salt
½ cup (1 stick/113g) cold unsalted butter, cut into ½-inch cubes
1 large egg
2 tablespoons milk
Smoked Salmon Cream Cheese Filling
8 ounces (225g) cream cheese, softened
½ cup (125g) plain Greek yogurt
4 ounces (125g) smoked salmon, finely chopped
2 tablespoons minced red onion
1 tablespoon fresh lemon juice
1 tablespoon capers
1 tablespoon minced fresh dill
1 tablespoon minced fresh chives
1 teaspoon horseradish cream
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Tomato (or other veg.) Ombré Design Process
10 ounces (280g) baby heirloom tomatoes in assorted colors, or substitute any colorful, crunchy vegetables you'd eat with a dip

Food processor
Plastic wrap
Rolling pin
Kitchen shears
Baking sheet
9-inch removable-bottom tart pan
Pie weights, (or dry beans or rice, or pennies to use as pie weights)
Aluminum foil
Smoked Salmon Cream Cheese Filling
Standing or handheld electric mixer, or a wooden spoon, whisk & elbow grease
Medium bowl
Rubber spatula
Tomato (or other veg.) Ombré Design Process
* Cookie or other cutters of choice
* 1 plate/tray per color of vegetables you're using to top the tart

Pre-Class Prep

Read through the Pie Party recipes, available 48 hours before our event starts via your account on The Civic Kitchen website or the links in the Reminder email you receive the day before the Party.
Have all ingredients and equipment out.
Wash produce and hands.
Everything (but the) Bagel Tart Pastry Shell
Bake and fully cool before our Pie Party begins (up to 2 days in advance)
Smoked Salmon Cream Cheese Filling
Measure all filling ingredients
Be sure your cream cheese is at room temperature (nice and soft)
